不用腌的鸡腿也一样入味。
汤汁也好好吃,家婆还喝一口。
又有女儿爱吃的鸡蛋,个人觉得开胃的菜色。
材料:
1) 鸡腿 3个 (原本食谱是用鸡翅)
2) 姜 2片
3) 蒜头 2瓣
4) 辣椒 1/2根
5) 水煮蛋 2个
调味料:
1) 香醋 5Tbsp
2) 酱油 3Tbsp
3) 绍兴酒 3Tbsp
4) 冰糖 1 + 1/2 Tbsp
5) 八角 1个
6) 水 100ml
做法:
1) 将鸡腿放入滚水中川烫,捞起备用。姜切片,蒜头切片,辣椒去子,备用。
2) 取一锅,放入做法(1)的鸡腿,姜片,蒜片,辣椒,水煮蛋以及调味料,盖上烘培纸或铝箔纸做成的盖子,大火煮滚后转小火闷煮越15分钟,即完成。
温馨提醒:
1) 将烘培纸或铝箔纸做成的盖子,盖在鸡腿上面,帮助均匀入味。
【Braised Chicken Drumstick with Vinegar】
Ingredients:
1) Chicken drumstick 3
2) Ginger 2 pieces
3) Garlic 2 cloves
4) Chilli 1/2
5) Hard boiled egg 2
Seasoning:
1) Black vinegar 5Tbsp
2) Soy sauce 3Tbsp
3) Shaoxin wine 3Tbsp
4) Rock sugar 1 + 1/2 Tbsp (I replaced this with castor sugar)
5) Star anise 1
6) Water 100ml
Methods:
1) Boil a pot of water, when it is ready, put in the chicken drumsticks, allow them to boil for around 5 minutes, remove chicken from the pot. Chop the ginger, garlic and chili into pieces.
2) In a pot, put in the chicken drumsticks, ginger, garlic, hard boiled egg, water and the other seasoning ingredients. Cover with a piece of aluminum foil on top (this helps to maintain the aroma of the dish). Use high heat till they start to boil and reduce to low heat and continue for around 15 minutes.

气压锅煮法
1. 全部材料下气压锅 ,鸡皮向下,( 鸡也没有川烫), 高压10分钟。
2.开盖后用 stir fry 功能煮一下,大约5分钟,间中翻面,让两面都上色后就完成。
